The destination. "Away" is enough; a named beach is a security tip for anyone watching your home.
"Limited access to email". Either you are reading it or you are not; say which, and if you are not, say so plainly.
A promise to check in. If you plan to peek at email once, do not put it in writing, or every sender will expect the peek to be for them.
A return date you have not padded. Set the reply day to your first full day back, not your travel day.
The word "vacation" when writing to a client in a crunch; "away" or "on leave" carries less friction.

Should a vacation auto reply say you have limited access to email?
No, because it is almost never true in the way the sender hears it. Either you are reading email or you are not; say which. Not reading email until a named date sets a boundary that nobody can argue with, and the colleague you name is the answer for anything urgent.
